How to unlock the water mode of the bike

• Keep playing until you get the sixth gym badge.
• Shortly after the sixth battle in the gym, you will come across the man who first gave you the bike.
• Save this man from Team Yell members by beating them in battle.
• Man will upgrade your bike to have water mode.

Pokemon Sword and Shield water mode for your bike is the new version of Surf HM (Hidden Move) that appeared in previous games. As evidenced by your awesome new bike upgrade, there's no need to make a Surf move here!
